If I am going change our existing MDT server or move the distribution
share to another server with different name. Is that true that the only
thing I have to do is to re-create the MDT boot disc? Or I have to
change other reference in the workbench as well.

You need to update deploy.xml and bootstrap.ini (and yes, after
updating bootstrap.ini, updating the deployment point)

Also verify that any custom scripts or cs.ini rules doesnt have
hardcoded server names

If you added any custom scripts, you should know where you added them,
but normally in distribution\scripts

cs.ini (customsettings.ini) is in the control folder
